Description – Lactic acid esters of monoglyceride is called lactylated monoglyceride in which lactic acid is bound with monoglyceride. It has foaming, stabilising and emulsifying ability. It is used in shortening for cakes, desserts and foaming for cream by itself or in combination with monoglyceride.
Application – Lactylated esters are used in non-dairy creamers to disperse fat-based creamer uniformly in the hot beverage. Because of their powerful aerating and stabilising properties, they are used as whipping agents.
